a cycle of pumpkin for when the sky sucks (iulia)

ingredients:
• 150g of butternut squash
• 30g of chickpeas (soaked)
• 3 cloves of garlic
• spinach
• vegan yoghurt
• lemon juice after taste
• tempeh

spices:
• cinnamon to keep the inflammable ego under control
• nutmeg
• smoked paprika
• ginger powder
• cumin
• salt
• pepper

garnish with:
• sriracha
• peanut butter in consideration


A few years ago, back home, my mom had a garden. In the garden we also had a compost bin. One day my mom threw out some pumpkin seeds along side with other organic waste in that bin. The wind blew the seeds in the garden and pumpkins grew everywhere in questionable amounts. The pumpkins were neither expected nor desired but surely enjoyed.
As such, the most important aspect of the recipe is to plant the pumpkin seeds, for renewal. The cycle stands on the following process: you cook and enjoy, plant the seeds and wait for your pumpkins to grow, then use your pumpkins and repeat. Everyday they’ll grow more and more, lots of water and sun help. It takes around a week for the seeds to sprout and 90-100 days for pumpkins to grow. They are easily adaptable and motivational. Every morning when the sky sucks just go and water your pumpkins and be delighted by their growth.
To begin with, after you took out the seeds, chop your pumpkin in cubes or whatever shape works for you and boil them until you can do the fork trick. When the pumpkin is lowkey soft, strain it and then put it in a bowl together with the chickpeas and add the spices. The cinnamon has anti-inflammatory
effects so when your ego gets inflamed that should keep it under control.
Preheat the oven at 180C and spread the pumpkin and chickpeas on a baking sheet, cut the garlic cloves in halves and then throw them there too. Don’t take off the garlic skin yet, it bakes better in its’ own shell (but don’t forget to peel it off at the end). Add some olive oil and put everything in the oven for around 25 min of reflection.
While things are roasting, cut the tempeh and fry it. Add doubt, but not too much. Protein helps you build.
Cut the fresh spinach and make a dressing for it by mixing vegan yoghurt and lemon juice, you need some sourness. Add salt and pepper after taste.
In a tiny recipient add peanut butter with consideration. For the people around you and yourself. Mix it with water until it’s homogenous.
You eat with your eyes so take your best plate and drizzle some shapes using sriracha just for the sake of drawing with sauce. From the left to the right add: the roasted stuff, tempeh and the spinach and continue drawing with consideration.

Eat.


Wake up everyday for at least 90 days and water your pumpkins; then repeat.
